Oven-Baked Fish with Artichoke & Garlic Sauce serves 4
130g Artichoke & Garlic Sauce 1 large fresh Red Roman (or any other white fish) 2 large onions 1 lemon, sliced fresh rosemary branches some extra virgin olive oil sea salt, freshly ground black pepper flat leaf parsley for decoration
Oil a large baking tray with some extra virgin olive oil. Slice onions in thick slices (around 1cm thick) and sprinkle around tray, then add salt and pepper. Make sure the fish is de-scaled and oil both sides and gut cavity, score the sides, then season generously with salt and pepper. Stuff the cavity with the rosemary bunch and lemon slices. Place in oven preheated to around 200 degrees C, and bake for about 20 minutes (depending on size of the fish).
Serve hot with Artichoke and Garlic sauce.
